Homemade Doughnuts from Scratch
There's nothing quite like a warm doughnut straight from the kitchen. Here's how to make them at home with ingredients you probably already have.
Ingredients
- 1 tsp active dry yeast
- 1 cup warm milk
- 3 tbs sugar
- 4 cups all-purpose flour
- 1 egg
- 2 tbsp butter, softened
- ½ tsp salt
- Oil for frying
Instructions
- Activate the yeast — Dissolve yeast in warm milk with a pinch of sugar. Let it sit for 10 minutes until foamy.
- Make the dough — Mix flour, sugar, and salt. Add the yeast mixture, egg yolks, and butter. Knead for 8 minutes until smooth and elastic.
- First rise — Cover and let rise in a warm spot for 1 hour until doubled.
- Shape — Roll out to ½-inch thickness and cut with a doughnut cutter (or two round cutters).
- Second rise — Place on a floured tray, cover, and let rise 30 minutes.
- Fry — Heat oil to 175°C (350°F). Fry doughnuts 1–2 minutes per side until golden.
- Glaze or dust — Toss in cinnamon sugar or dip in a simple glaze (icing sugar + milk).
Tips
- Don't skip the second rise — it's what makes them fluffy.
- Use a thermometer to keep the oil temperature steady.
- These are best eaten the same day!
